Chicken Chili / Enchilada Soup

Here's a great recipe for your turkey leftovers!
Yummy, and easy to throw together in your crock pot!

The recipe I use can be found here:

I usually just put together different chili ingredients in my crock pot for a few hours,
this batch included:
1-2 lbs Shredded Chicken (or Turkey)
2 15oz cans of beans (I used 1 chili & 1 black)
1 can corn
1-2 cans Rotel tomatoes (any variety you like)
1 can enchilada sauce
(as spicy as you like. Like it very mild? Puree 1 lg can of tomatoes, or add plain tomato sauce instead)
You can also add onion, green pepper, jalapenos, cilantro, etc...
I like to add a bit of garlic powder, onion powder, and chili & red pepper powders.

The great thing about this recipe is that it is pretty easily adaptable to fit your tastes -
don't like corn, leave it out. Extra spicy? Add hot sauce and jalapenos!
I also love this recipe because I can just throw it all in the crock pot for a few hours, go on with my day, and have a nice warm dinner ready on a cold day! And wouldn't this be perfect - throw everything in the crock pot on low, go Black Friday shopping, and have a warm lunch or dinner ready when you return. Yum!!
